"Mint to Enjoy Lemon Chillo Ice"

Is it hard to enjoy a better way to cool off on a balmy summer day than with a glass of ice-cold lemonade? Not if you're relaxing with me. Summer is in full swing and one of the best parts about the season is the weather. Sunny skies and beams of light that shine over your entire body giving you that natural glow. Another enjoyment I relish in is coming up with refreshing beverages that are low in calories and yummy to the tummy. My bestie has a lemon tree and they grow plump & juicy. She'll be my go to grocery store for the summer. even though I request in the Spring time as well. Anyhoo, enjoy the recipe.


 


When Your Bestie Hands You Lemons-- You Make Lemon Chillo Ice

"Lemon Chillo Ice Refreshing Recipe"


Step 1: Day 1

Squeeze 5 lemons in a measuring cup (use a lemon squeezer)

Pour 1/2 cup water

Pour 1/2 cup squirt soda

Mix all ingredients together and pour in a decorative ice cube tray then put in freezer over night.


Step 2: Day 2

Place beverage glass and/or glasses in freezer for 2 minutes. (this chills the glass and makes the beverage Ohhhhh so delish.)


Step 3: Day 2

1 cup ice cubes, or as needed

4 lemon slices, divided

2 tablespoons frozen lemonade concentrate (preferably Minute Maid)

2 tablespoons limoncello liqueur

4 ounces club soda

The above recipe is for one, however double the recipe for additional guests.

Fill a glass of your choice (suggested glasses are mentioned below) with the pre-made decorative ice cubes (your choice on quantity) Place 1 lemon slice in the glass. Spoon lemonade concentrate into glass and pour in limoncello. Pour in enough club soda to fill glass; stir well. Place the second lemon slice on the rim of the glass for garnish.

Step 4: (Additional recipe )

This additional recipe is a fun conversation piece and one I prefer for an adult afternoon of entertaining. Take Step 3 and mix all ingredients together except the ice cubes. Pour (all) ingredients into a Popsicle mold. After pouring ingredients into mold then insert Popsicle stick. Place mold in freezer the day before your party. The day/evening of your party serve this as the first beverage. You will pour 2-3 Tbsp. or limoncello liqueur & club soda. Then place (1) frozen Popsicle stick in (vintage and/or tumbler wine glass preferably) drop a garnish of fresh mint in glass. Wallah! Here's to turning lemons into a summer discussion your guests will relish in. Enjoy.
